WaLLi members enjoy friendly competition in ice cream contest

HANCEVILLE – Linda Cornelius took a chance that paid off with a first-place finish in the second Ice Cream Making contest hosted by the Wallace State Lifelong Learning Institute (WaLLi).

“I wanted to do something different,” said Cornelius of her decision to make – for the first time – a recipe for Tutti Fruitti Ice Cream with Pecans. “It was a pig in poke. I didn’t know what it would turn out like.”

It turned out to be the favorite of the six ice creams submitted for judging, with the classic “just plain vanilla” from Wanda Creel earning second place and the Chocolate Chip with Almond by Linda Pearson earning third place. Other entries included a mystery flavor most agreed was coffee, peanut butter and peppermint.

Below is the recipe for the Tutti Fruitti Ice Cream with Pecans.

Tutti Fruitti Ice Cream
3 ½ c. sugar
2/3 c. Pet milk
2 ½ c. undrained crushed pineapple
3 ripe bananas, mashed
1 c. maraschino cherries
1 pt. whipped cream
1 pt. milk
1 c. chopped pecans

Mix all together and place in ice cream freezer until set.

NOTE: Mrs. Cornelius said she added a splash of vanilla to the recipe.

The WaLLi program is open to area residents 50 and older, with membership including access to the Wallace State Wellness Center, exercise classes and activities. Additional opportunities for travel, social gatherings and educational programs are also offered.

An informational meeting will be held on Wednesday, Aug. 1, from 2 to 4 p.m. on the 12th floor of the Bailey Center. Registration for the year or the fall semester will be taken at the meeting. Membership is $99 for the year, starting in August, or $40 each for fall and spring semesters and $30 for summer semester.
