GOOD HOPE, Ala. – A new entertainment and dining option is making its way to Good Hope. In early fall, Paul White hopes to open his new craft brewery, Ethos, along with another business, Bloom Winery.
The shared space will be an open-air area with bar seating, family sized tables and high-tops for smaller parties and solo visitors. The outside of the building is currently under construction and lacking landscaping, but by the time opening comes around, White said, he hopes to have the entirety of the property fenced in, creating a safe space for families to enjoy without the worry of wandering children. An outdoor seating area is also on White’s list of to-dos. Adding firepits, seating and small yard games is also on the list of things yet to be done.
“I go to other breweries and they have small ropes, but I’m not going to let my kid run around outside next to a train track. It’s frustrating because you’re running around and trying to chase them and eat,” said White. “The fence will be another way the parents and visitors can relax and enjoy the brewery and all that we offer.”
White and his craft brewery will host a complete tap of craft and selectively chosen beers, five of which he has the capacity and ability to brew in-house. The stills and extractors will be the center point of the interior, and the starkly white room and stainless-steel equipment will remind each visitor of White’s dedication to his craft. A stage will be installed to host local live music.
“I hope to be able to have a new beer every week,” White said. “We have 16 taps, plus another four taps on the other side of the bar. Hopefully, we can work up to that.”
Partnering with Bloom Winery, an established stone-oven pizza joint with locations in Rogersville and Huntsville, White said he hopes that the eclectic feel and offerings of the two-in-one location can draw crowds and give the community another area to relax, let loose, enjoy craft beverages and sample the deliciously individualized stone-fired pies that will be offered under the same roof.
Bloom Winery is a family owned winery with soon-to-be three brick-and-mortar locations. The wood-fired pizza restaurant offers a curated selection of wine, wine slushes, charcuterie, fresh seasonal salads and customizable individual-sized pizzas.
White shared the circumstances under which the two businesses were linked and created their partnership, saying, “We met up with them through Jerry Bartlett, Good Hope’s mayor. It worked out perfect because we had extra space in here. So, we talked to him, and he was already looking for a place in Cullman to expand, so it worked out great.”
Like all newly opening businesses, both enterprises need employees. White said his portion of the building is looking for bartenders with fundamental knowledge and a love of craft beverages. Ideally, candidates would want to move up in the business and study under White, participating in the creation process. Starting out, White will be the sole brewer at the location, shouldering the responsibility of creating the master drinks alone.
Ethos Craft Brewing is currently seeking individuals to staff its bar and brewery, including bartenders and staff, sales representatives, a social media coordinator and tap room and event managers.
“Social media is huge. We really need someone who knows what they’re doing with algorithms and stuff,” White shared. “Managers are also a high priority. I need someone who knows what they’re doing.”
